A Healthy Stoup

What? Stoup?

Wikipedia says it’s generally hard to tell the difference between a soup and a stew but usually stews are thicker with veggies, meat, etc. or a gravy-like liquid and soups are thinner and liquidy. Rachael Ray says stoups are thicker than soup but thinner than a stew.

One day this week we were supposed to have turkey chili but we had used the ground turkey on Sunday night for turkey burgers which were super good thanks to my hubby! I decided to whip something up with what we had in the cupboards and with the leftover chicken we had.

And a Stoup is what I came up with! I just added a bunch of ingredients into a pot and boiled, then simmered for an hour or less. And it was really good!

 

I used these, but you could use anything you want to.
1 container of vegetable broth
1 can of tomato sauce
1 can of diced tomatoes
1/2 cup of frozen onions
1 can of great northern beans
1 can of corn
3 carrots
1 can of green beans
1 zucchini
1/2+ cup of Quinoa
Salt & Pepper
Seasonings to taste

One of the Simple Joys I am enjoying right now is being able to make good, wholesome food for my family and all of us enjoying dinner together. The night we had stoup, Lincoln prayed “In the beginning God created the heaven and the earth. Amen” it was so special and funny that he prayed that verse. I have been trying to work on 1 verse every couple of weeks and he remembered that one from a couple weeks ago.

  2. My husband HATES soup, so I have to thicken whatever I make as much as I can and call it stew. Which is fine by me, because I guess it is pretty annoying to have to slurp through all the broth. I like that “stoup” heads in the right direction! 😉

  5. Your stoup looks really good! I had one of Rachel Ray’s stoup recipes on my menu plan in Jan but never made it… I have also never tried quinoa – but have been meaning to. I have beef soup bones in my freezer that I plan to make into a soup next week. I bought some barley, too! Excited to try a new recipe. By the way, I have found that crusty bread to accompany the soup makes it easier for my family to eat! 🙂
