Easy Zucchini Casserole & Healthy Mental Health!

Tonight I had a blast playing Bunco with my girlfriends! I wanted to bring a healthy side dish since potluck dinners tend to be unhealthy. Although it worked out tonight that the mama's brought healthy food mostly! Not only was my dish healthy it is also good for my mental health to have a great time laughing & hanging out with friends. (And yours too!) 


Research from the Mayo clinic states "Good friends are good for your health. Friends can help you celebrate good times and provide support during bad times. Friends prevent loneliness and give you a chance to offer needed companionship, too." Friends can also:


  • Increase your sense of belonging and purpose
  • Boost your happiness
  • Reduce stress
  • Improve your self-worth
  • Help you cope with traumas, such as divorce, serious illness, job loss or the death of a loved one
  • Encourage you to change or avoid unhealthy lifestyle habits, such as excessive drinking or lack of exercise
I encourage you, especially if you are a Mother to take some time for yourself every week as well as some time with other ladies who are mothers going through or have gone through the same kinds of situations you are currently.


Here are some of the wonderful women I got to hang our with tonight, we had 2 tables.

Vlog of the recipe


What you need:
  • 2-4 zucchini (3-4 cups)
  • half of a large onion
  • 1 cup cottage cheese
  • 3 tables spoons cream
  • 1+ cups of sharp cheddar
  • 3 eggs
  • seasonings & salt to taste
What to do:
Preheat oven to 375 degrees. Slice zucchini then quarter it and chop up half an onion, set aside. In separate bowl mix cottage cheese, eggs, cream, cheddar & seasonings then add zucchini & onions and mix well. Pour into a glass baking dish and bake in oven for 45 minutes to 1 hour or until fully cooked, then ENJOY!
